the Betta With Feta Salad

Hello all!

I hope your weekend was as gorgeous as it was here in NE Ohio. Today’s recipe is a light salad perfect for a light lunch or mid-afternoon snack. All food items were purchased from Aldi, a grocery store that offers off-brand food items (although they do offer some name brands) at a low cost. I highly recommend that any person trying to live on a tight budget check it out! But remember: bring your own reusable bags and a quarter for the grocery cart!

For this salad, you will need:

4 medium sized strawberries, sliced.

¼ red onion, chopped as desired.

½ red delicious apple, chopped as desired.

¼ 8 oz. Cucumber, sliced.

½ cup chick peas, rinced.

3-4 romaine lettuce leaves, chopped.

3 white mushrooms, chopped.

2 tbs. Cracked pepper feta.

Sea salt and black pepper as desired.

Optional (dressing): 1 tbs. Olive oil and apple cider vinegar.

When I bought these items, they cost:

Strawberries (case of 22): $1.99 or $.09/berry, $.39 for this salad.

Cucumbers ( 2, 8 oz.): $.99 or $.06/oz, $.48/cucumber, $.12 for this salad.

Romaine (pack of 3 hearts): $1.99/pack, $.66/heart, est. $.13/ leaf, $.39 for this salad.

Chickpeas (can): $.65/can, $.18/serving, $.18 for this salad.

Mushrooms (case of 16): $.69/case or $.04/mushroom, $.12 for this salad

Red Delicious (bag of 8 apples): $2.99/bag or $.37/apple, $.18 for this salad.

Red onions (bag of 3): $1.69/bag or $.56/onion, $.14 for this salad.

Cracked Pepper Feta (4 servings/container): $1.99/container, $.49/serving, $.49 for this salad.

This yields about 3 or 4 servings, depending on how much you would like to eat, so it ends up costing about $.67/serving.
